The base is a crumbly savory shortcrust pastry, the filling soft and fragrant thanks to the ricotta and zucchini, and the crumbly topping recreates the mimosa effect in a savory version.

Ingredients

  • 2 3/4 cups all-purpose flour
  • 7 tbsp butter
  • 2 eggs (Large)
  • salt
  • Half packet baking powder
  • 2 cups ricotta
  • 2 eggs
  • 1 zucchini (medium)
  • salt
  • ground turmeric (And other spices to taste)

  • Let’s make the shortcrust
    In a food processor put the flour, a pinch of salt, the eggs,
    the cold butter cut into pieces and the baking powder

  • pulse until you obtain a compact mixture.
    Take about three quarters of the dough and press it directly into the pan with your hands,

  • lining the base and sides.
    Prick the bottom with a fork.

  • Prepare the filling
    Let the ricotta drain to remove excess liquid.
    Grate the zucchini, add a pinch of salt and let rest for a few minutes.

  • When they have released their water, squeeze them well and add them to the ricotta.
    Add the eggs,

  • Add a little salt, turmeric and spices to taste and mix until you get a creamy mixture.

  • Assembly
    Pour the filling over the shortcrust base and level well.
    Crumble the remaining dough over the filling to create the savory mimosa effect.
    Baking
    Bake at 356°F for about 50 minutes.
    Let cool slightly before removing from the pan.
