Ingredients:

  • 2 eggs
  • 1 1/4 cups flour
  • 1 container yogurt
  • Half packet instant yeast for savory preparations
  • 1 pepper
  • 3.5 oz mortadella
  • 3.5 tbsp extra virgin olive oil

  • In a large bowl, crack the eggs and beat them well with a whisk. Add a pinch of salt.
    Gradually add the yogurt, extra virgin olive oil, flour, and sifted yeast, mixing until you get a homogeneous mixture.
    Cut the pepper into cubes

  • Dice the mortadella and gently fold it into the batter.
    Fill muffin molds lined with muffin cups up to 3/4 of their capacity.

  • Bake in a preheated oven at 356°F (180°C) for about 20-25 minutes, until the muffins are golden on the surface and cooked inside.
