- 3.5 oz Parmesan

First, start by beating the egg whites with an electric mixer until stiff peaks form. Add a pinch of salt, the Parmesan, and mix gently. Chop the nuts and add them. Mix well. Take a bit of the mixture with your hands and form small balls. Place them on a baking sheet lined with parchment paper, leaving some space between them.
Bake at 356°F for about 15 minutes.
