- 1 avocado
- 7 oz soft cheese (Soft)

In a bowl, put the soft cheese (which can be stracchino, mascarpone, Philadelphia, etc.), the red pesto, and mix to obtain a smooth cream. Put some of the obtained cream into small glasses. Add some crumbled crackers, cooked and peeled shrimp.
or smoked salmon, some diced avocado, some more cream, and a bit more shrimp and salmon.
Garnish as desired with pink peppercorns and wild fennel.
