Ingredients for the Sicilian Cannolo Birthday Cake:
20/22 cm mold
- 5 eggs
- 1 cup sugar
- 1 cup flour
- 1/3 cup potato starch
- Half packet baking powder
- 1 egg
- 1/3 cup sugar
- 1 cup milk
- 3.5 oz chocolate
- 1/4 cup cornstarch
- 1 lb ricotta
- 1/4 cup chocolate chips
- 1/2 cup sugar
- 2 cups whipped cream
- Cannoli (Empty and filled)

Preparation of Sponge Cake:
Whip the eggs with the sugar until you get a light and creamy mixture. Add the baking powder and the flour and mix well. Pour the obtained mixture into the mold and bake at 350°F for about 50 minutes.
Preparation of chocolate cream:
In a saucepan, place the egg, sugar, and starch, and mix. Add the milk while stirring. Bring to the heat to thicken. Stir constantly to prevent it from sticking. Once thickened, add the chocolate and mix well.
Transfer the obtained cream to a bowl, cover with plastic wrap, and let cool. Once the sponge cake is well cooked and cooled, remove the crust and cut three equal discs.
Preparation of ricotta cream:
In a bowl, combine the sugar, chocolate chips, and ricotta and mix.
Assembly:
Place the first sponge cake disc, dampen it,
add a layer of ricotta cream, the second sponge cake disc, and dampen it. Add a layer of chocolate cream and cover with the third disc. Dampen it and clean the edge if necessary.
Cover the entire cake with whipped cream, crumble some empty cannoli shells, and decorate the cake. Chocolate chips and candied fruits can also be added as desired.
