Simple Homemade Porchetta
Since Porchetta is one of the things I like the most but often don’t buy because, for my personal taste, it’s too seasoned 🤣 and I don’t like some spices, I decided to make a version with few seasonings, using only salt, pepper, a bit of garlic, and rosemary. As I was “in a hurry” I didn’t even let it “rest.” So it turned out to be a delicious porchetta made in a simpler way ☺️. Of course, you can add any seasonings you want and if you have time let it rest for a few hours before baking.

Ingredients for Simple Homemade Porchetta:
- 1 pork belly (Piece)
- salt
- extra virgin olive oil
- pepper
- rosemary
- white wine

First, we need to choose a nice piece of pork belly that’s not too fatty (it’s essential), then we make some cuts. We put a bit of pepper, salt, and garlic powder
and a bit of oil. We massage for a few minutes. Add a sprig of rosemary and roll it up. Tie it well with string (watch video HERE).
We put a bit of salt, pepper, and oil on top and then with the tip of the knife we prick the skin. We wrap it in parchment paper
then in foil. In a tray, we put water and wine and place it in the oven under the rack. Place the porchetta on top and cook at 350°F for about 2 hours (usually cooking takes an hour for every kg of meat).
After about 2 hours, uncover it and continue for another 1/2 hour depending on the size.
