Soft Mimosa Tart with Hazelnut Cream and Strawberries Lactose-Free
I needed to bring a dessert to a friend who is lactose intolerant, and since we are close to International Women’s Day, I thought of making a soft tart with a lactose-free base and filling it with strawberry jam and a hazelnut cream also made without lactose, then covered with diced sponge cake to create the mimosa effect.

Ingredients for the Soft Mimosa Tart with Hazelnut Cream and Strawberries Lactose-Free:
- 3 eggs
- 3/4 cup sugar
- 1 cup flour
- 1/4 cup vegetable oil
- Half packet baking powder
- vanilla
- 2 cups hazelnut milk
- 1/2 cup hazelnut cream
- 1/3 cup cornstarch
- 2/3 cup strawberry jam

Base Preparation:
Mix the eggs and sugar until fluffy. Add the oil, flour, a bit of vanilla flavoring, the baking powder, and mix well.
For a more intense color, add a bit of turmeric. Pour the mixture into a floured mold. Bake at 356°F for about 25 minutes.
Cream Preparation:
Mix cornstarch with hazelnut milk
heat until thickened. Add the hazelnut cream. Stir constantly. Once thickened, transfer to a container, cover with plastic wrap, and let cool.
Assembly:
Once the base is cooked and cooled, turn it upside down and moisten it. Spread the strawberry jam on top. Add the cream using a piping bag. Decorate with sponge cake cubes and strawberries.
