- 1 cup heavy cream
- 5.3 oz sugar
- 8.8 oz mascarpone

Cream Preparation:
In a pan, we put the raspberries, sugar, lemon juice and cook for about 10 minutes. Let it cool well. In a bowl, we put the mascarpone, cream, sugar, and the well-cooled raspberry mixture

Base Preparation:
First, we need to separate the yolks from the whites and add sugar in equal parts. Beat the whites until stiff. Add the hot water over the yolks and beat, add the oil,
the lemon zest, vanilla and flour. Finally, gently fold in the beaten egg whites. Pour the obtained mixture into the baking sheet, sprinkle and level then bake at 350°F for about 20 minutes.
After cooking, place a sheet of parchment paper on top and flip it over,
remove the parchment paper stuck during cooking. Add the prepared cream on top, sprinkle and level then roll and wrap in parchment paper. Refrigerate for a few hours then slice.
