Spaghetti alla Gricia
When it comes to eating, my eyes light up 🤣 and I love eating almost everything, sweet and savory, but when I hear “gricia” I just can’t resist, it’s truly one of my favorite first courses. Since I received a pasta machine as a gift, I couldn’t resist making homemade fresh spaghetti, but there’s no problem if you don’t have one; store-bought spaghetti or whatever pasta you prefer works perfectly. The gricia seems like a simple dish to prepare, but it’s not quite so, because not everyone can make a nice creamy sauce ☺️ I’ll show you how I prepare it! Of course, the quality of the raw materials is very important!

Ingredients for Spaghetti alla Gricia:
- 5.5 oz spaghetti
- 3.5 oz guanciale
- 1.75 oz pecorino
- pepper

Sauté the guanciale with a little oil (I like it very crispy), when it turns golden, remove it and set it aside. Meanwhile, cook the pasta to your liking, drain it, and add it to the pan where you sautéed the guanciale. Mix for a few seconds.
Add the grated pecorino and a bit of cooking water and mix quickly to obtain the creamy sauce. Finally, add the guanciale and a little black pepper.
