The most beloved first course ever and also the most debated one 😁. Some make it only with yolks, some add onion, others use bacon, etc. Today, to celebrate Carbonara Day I am offering you my version, which I personally adore ☺️. The preparation of Spaghetti Carbonara is very simple and fast, watch the video HERE.
First, in a pan, brown the guanciale (it must be golden and crispy). In another pan, put the eggs, a bit of pepper, and whisk them. Add the Pecorino and mix.
Meanwhile, cook the spaghetti, and once the guanciale is ready, put it on top, add a bit of cooking water, and mix.
Add the eggs while stirring. Turn off the heat and continue mixing for a few minutes until you get the desired creamy consistency. Serve immediately with a sprinkle of Pecorino, a bit of pepper, and guanciale!
