  • 1.1 lbs asparagus
  • 3/4 cup vinegar
  • 1 cup extra virgin olive oil

  • Clean the asparagus

    In a pot bring to a boil:
    water
    vinegar
    a pinch of salt
    When the water boils, add the asparagus

  • Let them cook for about 6–7 minutes.
    They should be tender but still slightly crisp.
    Dry the asparagus
    Drain the asparagus and place them on absorbent paper.
    Let them dry for a few hours to remove all moisture.
    This step is essential for good preservation.

  • Prepare the jars
    When the asparagus are well dried, place them in previously sterilized jars.
    Add spices to taste such as:
    whole peppercorns
    garlic
    chili pepper
    bay leaf
    rosemary
    Cover completely with extra virgin olive oil.
    If needed, use preserving weights to keep the asparagus submerged in the oil.
    Seal the jars tightly.
