Spiced Lard
I’ve been carried away by childhood memories, and among these, we used to prepare lard at home. My father particularly enjoyed carefully preparing sausages, capocollo, lard, and all these delicacies. After successfully making the sausages, I thought to myself: “at this point, I must also make the lard that my father used to prepare 😅”. In reality, he made three types, one smoked, one in brine, and this spiced one. Since this one seemed the simplest to me, I chose to best reproduce his recipe. This lard is perfect with cold cuts for appetizers during the Christmas season, as an aperitif, or you can use it as a gift in baskets you prepare for Christmas for friends and family. They will appreciate it very much!!!

Ingredients for the spiced lard:
- lard (With a bit of lean meat)
- salt
- garlic
- onion
- bay leaf
- paprika
- pepper

First, cut the lard into pieces and place them in a pot with a bit of water. Add some bay leaf, pepper, onion, garlic, salt, and cook for about an hour.
Halfway through cooking, turn the pieces of lard. Once cooked, let them cool well, then take one piece at a time and cover with paprika and spices to taste.
