A typical Carnival recipe is castagnole. I must say that there are many versions around, from the simplest ones to the more elaborate ones. Today I decided to offer you a simple version made with a quick dough and shaping the balls using a spoon, without rolling it out. A delicious recipe made without eggs so it’s also suitable for those who are intolerant or for various reasons cannot eat eggs.

Ingredients for spoon castagnole:
- 4 oz potatoes (Boiled)
- 1 cup flour
- 1 1/2 tbsp butter
- 1/4 cup milk
- vanilla
- 3 tbsp sugar
- 1 tsp baking powder
- 1/4 cup plain yogurt
- vegetable oil

First, we need to clean, wash, and boil the potatoes, drain them well, then mash them and let them cool. Once cooled, add the butter, sugar, yogurt.
Mix. Add a bit of vanilla, milk, and stir. Add the baking powder,
Add the flour and mix well. Place the obtained mixture using two spoons into the hot oil to obtain the castagnole. Fry them for a few minutes on all sides until golden. Drain them on absorbent paper.
Continue like this until the mixture is used up. Dust with plenty of powdered sugar.
