Squid and Shrimp Risotto
A delicious risotto made with seafood and shellfish. A first course to include in our fish-based menus and beyond. A simple and very light recipe to prepare. You can pair this risotto with a fish appetizer like the Marinated Salmon Carpaccio, a main course like Fried Fish, and for dessert a Berry Tiramisu!

Ingredients for Squid and Shrimp Risotto:
- 5.6 oz rice
- 1 onion
- 5.3 oz squid
- salt
- extra virgin olive oil
- 1.8 oz shrimp
- 1.3 cups water (Vegetable stock)
- 1/4 cup white wine
Steps
The preparation of squid and shrimp risotto is very simple and quick, watch the video HERE.
In a pan, place the cleaned, washed, and sliced onion, a little oil, and sauté. Add the cleaned and sliced squid and cook for a few minutes.
Add the previously rinsed rice and toast it. Add the white wine, then continue cooking by adding the water/stock a little at a time.
Stir occasionally, then add salt. 5 minutes before the end of cooking, add the shrimp and cook for about another 5 minutes.
