stuffed mussels in the style of Vieste
A recipe I have always loved but didn’t know its origins came from Vieste as can be deduced from the name. Actually, I have always called them stuffed mussels in sauce, but this year, going on vacation to the Gargano, I made this discovery, so from now on, I will call them by their name🤩! The mussels in the style of Vieste can be served as an appetizer or as a second course in a seafood menu!

Ingredients for stuffed mussels in the style of Vieste:
- mussels
- garlic
- extra virgin olive oil
- white wine
- cherry tomatoes
- bell peppers (Red and yellow)
- parsley
- extra virgin olive oil

Steps
The preparation of mussels in the style of Vieste is very simple, watch the video HERE.
First, clean and wash the mussels well. In a pan, put some oil, garlic, and let it fry.
Add the chopped bell peppers and cook for a few minutes. Add the cherry tomatoes and mussels. Add the white wine,
cover and cook for about 15 minutes. Stir occasionally. Once opened, let them cool down.
Sauce preparation:
In a pan, put some oil,
garlic and let it fry. Add the tomato sauce and cook for about 30 minutes.
Filling preparation:
Combine the pecorino cheese, soaked (in the sauce released from the mussels) and then squeezed bread, eggs, parsley and mix. Add a little breadcrumbs to adjust the consistency
fill the mussels one by one. After about 30 minutes, put them in the sauce and continue cooking for another 15 minutes on low heat.
Finally, add the freshly chopped parsley.
