Stuffed Omelette with Ham and Scamorza

- 4 eggs
- salt
- extra virgin olive oil
- 1/3 cup Parmesan cheese
- parsley
- 3.5 oz cooked ham
- 3.5 oz scamorza
Steps

In a bowl, we put the eggs, a bit of salt and olive oil, the Parmesan, and mix.
Add some chopped parsley and mix. Pour some of the mixture into a well-heated pan and spread it over the entire surface as if making a crepe. Cook for a few minutes then turn it over.
Continue to cook for a few more minutes. Repeat until all the mixture is used up. Once ready, immediately place some scamorza and ham on top of each.
Fold in half and wait a few minutes to allow the scamorza to melt.
