  • 4 eggs
  • salt
  • extra virgin olive oil
  • 1/3 cup Parmesan cheese
  • parsley
  • 3.5 oz cooked ham
  • 3.5 oz scamorza

Steps

  • In a bowl, we put the eggs, a bit of salt and olive oil, the Parmesan, and mix.

  • Add some chopped parsley and mix. Pour some of the mixture into a well-heated pan and spread it over the entire surface as if making a crepe. Cook for a few minutes then turn it over.

  • Continue to cook for a few more minutes. Repeat until all the mixture is used up. Once ready, immediately place some scamorza and ham on top of each.

  • Fold in half and wait a few minutes to allow the scamorza to melt.

  • Enjoy your meal!
