Swiss chard and soft cheese meatballs
My husband went to buy vegetables and came back with two bags of Swiss chard 🙈 so I sautéed some in the pan, some with potatoes, some with cherry tomatoes, but there are still some left 🤣 so a quick look in the fridge found some open soft cheese I needed to “use up“, and I got the idea to make these small meatballs. I must say, I didn’t expect it, but they turned out wonderfully 😍 then I chose to cook them in the air fryer and didn’t use eggs, so they are also very light ☺️. If you don’t have an air fryer, no problem, you can bake them in the oven or fry them in a pan with a bit of oil!

Ingredients for Swiss chard and soft cheese meatballs:
- 17.5 oz Swiss chard (Boiled)
- 3.5 oz soft cheese
- 1.75 oz stale bread
- 1.75 oz breadcrumbs (Approximately)
- salt
- extra virgin olive oil
- garlic powder
- turmeric powder
Steps
The preparation of the Swiss chard and soft cheese meatballs is very simple, watch the video HERE.
First we need to clean and boil the chard, then weigh 500 g and chop them using a blender. Transfer them to a bowl and add the soaked and well-squeezed bread, the soft cheese, a bit of salt, garlic powder, and turmeric.
Mix well. Add breadcrumbs, adjusting the amount based on how much water the chard releases. Take a bit of the mixture at a time and form the meatballs, then coat them in breadcrumbs.
Continue until all the mixture is used. Place the meatballs in the basket of the air fryer, spray a little oil on top, and cook at 374°F for about 20 minutes.
