Tenderloin Roll with Omelet Heart
A perfect roll for the holiday season, especially for Christmas lunch or New Year’s Eve dinner! This time, I wanted to make a different roll that we can serve both as an appetizer and as a main course! I used pork tenderloin as the base, then chose to make a vegetable omelet for the filling and wrap it in bacon. I’m telling you, it turned out DIVINE! Ingredients for the Tenderloin Roll with Omelet Heart:
- 1 pork tenderloin
- 3 eggs
- bell peppers
- bacon
- pepper
- paprika
- extra virgin olive oil
- garlic
- onion
- parmesan
Steps
The preparation of the Tenderloin Roll with Omelet Heart is very simple; watch the video HERE.
First, in a pan, put the sliced bell peppers, a bit of oil, garlic, and onion, and sauté them. Meanwhile, in a bowl, place the eggs,
Add a bit of pepper, salt, Parmesan, and beat with a fork. Pour the mixture over the sauté. Cook for a few minutes
then flip the omelet using a plate or lid. Cook for another 1/2 minute. Take the tenderloin, open it up, and pound it to create the base for our roll.
Sprinkle a little salt, garlic, pepper, and paprika on top.
Slice the omelet into strips and place them on top. Roll tightly. Arrange the bacon slices in a row
and lay them on the roll. Wrap the slices to enclose the roll. Wrap it in parchment paper and bake at 356°F for about 30 minutes, then uncover and bake for another 15/20 minutes.
