  • 1 3/4 cups whole wheat flour
  • 2/3 cup sugar
  • 3/4 cup plant-based milk
  • 1/2 cup potato starch
  • 1 teaspoon baking soda

  • Prepare the apple filling:

    Cut the apples into cubes. Place the apples in a pan with the sugar and margarine. Cook for about 10 minutes, until the apples are soft. Add cinnamon, stir, and turn off the heat. Add the chopped nuts and raisins. Let it cool completely.

  • Prepare the dough

    In a bowl, combine the flour, sugar, potato starch, and baking soda, then mix the dry ingredients. Add the plant-based milk and oil, mixing carefully until you obtain a uniform mixture. Flavor with vanilla, lemon zest, and orange zest.

  • Add the cooled apple mixture and mix again. Pour the batter into brioche or muffin molds. Decorate the surface with sliced almonds or sugar crystals. Bake in the oven at 350°F for 30–40 minutes, until golden and well risen.
