Vegan Banana and Cherry Pound Cake
Since I found still cherries around, I couldn’t resist buying them ☺️ but this time I chose to make a lighter dessert for breakfast without using eggs, milk, or butter, making it vegan! I had some very ripe bananas so I decided to include them in this cake with cherries, and I must say the combination is excellent! It came out soft and delicious, perfect for breakfast, a snack, and why not, even as a dessert at the end of a meal!

Ingredients for the Vegan Banana and Cherry Pound Cake:
- 2 3/4 cups flour
- 1 cup sugar
- 1/3 cup potato starch
- 1/2 cup vegetable oil
- 2/3 cup sparkling water
- 10 1/2 oz cherries
- vanilla
- 1/4 cup lemon juice

First, in a bowl, mash the bananas with a fork. Add the oil, water, lemon juice, and mix. Add a bit of vanilla, the potato starch, the flour,
Add the sugar, the baking powder, and mix. Add the pitted cherries and mix well. Place the obtained mixture in the mold and bake at 356°F for about 40 min.
