Vegan Banana and Walnut Loaf Cake

A dessert made without eggs, milk, or butter, so it’s vegan. I included bananas and walnuts in the batter, and the final result was excellent; I achieved a loaf cake that is soft and delightful with very few ingredients. A very quick recipe to prepare and perfect to serve on any occasion, whether breakfast, snack, dessert, etc. Personally, I really like vegan desserts because they are much lighter and last longer!

  • 1 3/4 cups flour
  • 1 cup walnuts
  • 1/2 cup sugar
  • vanilla
  • 4 bananas
  • 1/4 cup vegetable oil
  • Half a packet baking powder
  • lemon zest

Steps

  • In a bowl, place the peeled bananas and mash them with a fork. Add the sugar, a bit of vanilla, the oil, and the baking powder.

  • Add the flour, a bit of lemon zest, and mix. Finally, add the walnuts and mix again.

  • Pour the mixture into a loaf pan lined with parchment paper. Level the top and sprinkle some more walnuts on top. Bake at 350°F for about 50 min.
