Vegan Blueberry Risotto
A sweet and sour first course that’s vegan and made with fresh fruit. A somewhat unusual recipe! We usually use fruit for desserts, but this time I decided to make risotto using blueberries. As we know, blueberries are full of beneficial properties for our body and contain many antioxidants! A delicious combination that pairs perfectly with rice, seasoning (spices, garlic, oil, etc.), and fruit.

Ingredients for Vegan Blueberry Risotto:
- 1 onion
- 1 garlic
- olive oil
- 1 cup rice
- pepper
- 1 1/4 cups vegetable broth
- 3 tbsps white wine
- 7 oz blueberries

In a saucepan, place the chopped onion, a bit of oil, the garlic, and sauté. Add the previously rinsed rice and toast for a few minutes.
Pour in the white wine and let it evaporate. Add the washed blueberries and the broth little by little, cooking and stirring occasionally. During cooking, slightly crush the blueberries. Add spices to taste.
