  • 7.1 oz carrots
  • 5.3 oz peas
  • 5.3 oz celeriac
  • 3/8 cup plant-based milk
  • 3/4 cup vegetable oil
  • 1 teaspoon mustard
  • lemon juice
  • 2 tablespoons soy yogurt
  • salt

Steps

  • Peel the potatoes, carrots, and celeriac

  • Cut into cubes

  • Boil them separately in salted water until tender but not mushy.

  • Preparation of vegan mayonnaise
    Pour the immersion blender glass with oil, soy milk, mustard, lemon juice, and a pinch of salt.

  • Blend until you get a thick and homogeneous cream.
    Add plant-based yogurt if you want a softer mayonnaise.

  • Put the potatoes, peas, carrots, and celeriac

  • Add mayonnaise to taste and mix. Transfer to a container

  • Top with a layer of mayonnaise and decorate as desired!

Store in the refrigerator for up to 24–36 hours

Serve at room temperature 10–15 minutes before enjoying

Can be prepared in advance to save time on Christmas day
