Do you need a simple, quick, vegan Easter dessert that can also be prepared a few days in advance? Then this recipe is for you! Delicious little cookies made in a vegan version, without eggs, milk, or butter shaped like a dove as we are at Easter. These cookies are also perfect as a gift if we are going to vegan friends or relatives and don’t know what to bring!

Ingredients for Vegan Doves:

  • 1 3/4 cups flour
  • 3/4 cups sugar
  • 1/2 cup almond flour
  • 1/3 cup vegetable oil
  • Half packet baking powder
  • vanilla
  • 1/4 cup unsweetened cocoa powder
  • 1/2 cup plant milk (Cocoa-flavored plant beverage)
  • almond flavor
  • lemon zest
  • orange zest

Steps

  • In a bowl, mix flour, sugar, almond flour, baking powder, vanilla, lemon zest, orange zest, and cocoa.

  • Add the oil, plant beverage, almond flavor, and mix. Knead until you obtain a homogeneous dough. Wrap it in plastic and refrigerate for about 30 minutes.

  • After about 30 min, take small pieces and roll out two ropes. Place them overlapped to form the dove. Continue like this until the dough is used up!

  • Arrange them in a row on the tray, leaving some space between them. Bake at 350°F for about 20/25 minutes.

  • Enjoy your meal!
