Vegan Lentil Loaf
A vegan loaf of vegetables great to enjoy as an appetizer or main course. A simple recipe made with a mix of vegetables like lentils, carrots, celery, onion, and spices, breadcrumbs and potato starch. The result, I tell you, is exceptional, if you want to cook a vegan dish I recommend this delicious loaf. You can also prepare it in advance and cook it right on time!

Ingredients for the vegan lentil loaf:
- 1 cup lentils
- 2 carrots
- 2 celery stalks
- 1 onion
- 3.5 tbsp tomato sauce
- 1 bouillon cube
- bay leaves
- spices (As desired)
- 3 tbsp breadcrumbs
- 2 tbsp potato starch
Steps
The preparation of the vegan lentil loaf is very simple and fast, watch the video HERE.
In a pot, place the lentils, celery, onion, and carrot, and start cooking. Stir occasionally, check your package for cooking time.
Towards the end of cooking, add the vegetable bouillon cube, tomato sauce, and bay leaf. Once cooked, place them in the blender with the carrot, celery, and onion without the liquid
blend. Let it cool slightly then add the breadcrumbs and potato starch
Add spices to taste (turmeric, garlic, paprika, etc.) and mix well. Place the mixture on a sheet of parchment paper and close tightly to form a loaf.
Wrap like a candy and cook at 356°F (180°C) for about 30 minutes.
