Ingredients for the Vegan Papaya and Coconut Cake:

9 inch pan

  • 1 1/2 cups flour
  • 1/2 cup sugar
  • 1/4 cup vegetable oil
  • 1 packet baking powder
  • ground cinnamon
  • lemon zest
  • ground turmeric
  • 1 cup water
  • Half papaya
  • 3/4 cup grated coconut
  • Half lemon juice

  • In a bowl, place the flour, sugar, coconut, and baking powder, and mix. Add some lemon zest and cinnamon to taste.

  • Add the water, strained lemon juice, oil, and vanilla, and mix.

  • Add some turmeric and mix. Meanwhile, clean the papaya and cut it into pieces, then add it to the mixture.

  • Mix well and pour the obtained mixture into the pan, level it, then bake at 350°F for about 50 minutes.
