Vegan Pistachio Treats
Delicious single servings made by alternating layers of shortcrust and pistachio cream, all made in a vegan version without using any animal-derived ingredients. A very simple recipe that you will surely love, especially if you love pistachios.

Ingredients for the Vegan Pistachio Treats:
- 21 oz flour
- salt
- 7 fl oz water
- 7 fl oz vegetable oil
- 7 oz sugar
- 2 tsp baking powder
- 6 cups plant-based milk (Pistachio flavored)
- 5.3 oz cornstarch
- 8.8 oz sugar
- 7 oz pistachio paste

Basic preparation:
In a bowl, put the flour, sugar, and baking powder and mix. Add the oil, water, and mix until you get a smooth dough.
Divide it into 4 equal parts, then take one piece at a time and roll it out on a sheet of parchment paper. Add a little flour if needed and roll out as thin as possible.
Make some holes. Roll out the other 3 pieces the same way. Bake them at 392°F for about 12 minutes.
Cream preparation:
In a pot, put the sugar, cornstarch,
Add the milk and mix. Add the pistachio paste and cook on the stove to thicken, stirring constantly. Once thickened, turn off the heat.
Cover with plastic wrap and let cool.
Assembly:
Place the first piece of cooked and cooled shortcrust, add a layer of cream (about 1/4), spread and level it.
Place the second piece of shortcrust, another layer of cream (1/4), the third piece of shortcrust, another layer of cream (1/4)
finally place the 4th piece of shortcrust and set aside the remaining cream (1/4). Cover and place a weight on top and let rest until the next day. The next day, trim the edges and then cut into pieces of the desired size.
place them on plates and pipe some dollops with the leftover cream on top. Decorate as desired.
