Ingredients for the Vegan Pumpkin Roll:

  • 10.5 oz flour
  • 1/2 cup soy milk
  • 4 tbsp vegetable oil
  • 0.2 oz fresh yeast
  • 1/2 cup sugar
  • lemon flavoring
  • vanilla
  • 14 oz pumpkin (Cooked)
  • 2.8 oz sugar
  • cinnamon powder

Steps

  • Prepare the dough:

    Place the flour, yeast, oil, lemon flavoring, vanilla, sugar, and milk

  • knead for about 10 min. When the dough is ready, transfer it to a bowl and let it rise for about an hour.

    Prepare the filling:

    Mash the cooked and cooled pumpkin with a fork.

  • Add sugar and cinnamon.

    After about an hour, take the dough and divide it into two pieces.

  • Roll out one piece at a time and place about half of the filling on top. Roll it up and seal the ends well.

  • Proceed the same way with the other piece of dough. Place the two rolls in the baking sheet, leaving a bit of space between them. Let rise for another 30 min, then brush with a little soy milk and bake at 356°F for about 50 min.

  • Enjoy your meal!

Storage:

The vegan pumpkin roll can be perfectly stored for 3–4 days at room temperature, well-covered with food wrap or in an airtight container, in a cool, dry place.

If you prefer, you can store it in the fridge to keep it fresh longer, up to 5 days. In this case, we recommend bringing it back to room temperature before enjoying it, or warming it slightly to restore its softness.

It can also be frozen: wrap it in plastic wrap and then in a freezer bag. It can be stored for about 2 months. Thaw at room temperature a few hours before serving.
