Vegan Romanian Panettone
A traditional Romanian recipe made in a vegan version, without eggs, milk, or butter. The Romanian panettone is very similar to pan brioche and is filled with a cream made from walnuts and cocoa, I must say it is very good 😋. Ingredients for vegan Romanian panettone:
- 4 1/2 cups Manitoba flour
- 1/2 cup sugar
- 3 tbsp fresh yeast
- 2 1/2 tsp salt
- 1/4 cup orange juice
- 1/4 cup vegetable oil
- 1 cup water
- 1/4 cup vegetable margarine
- lemon flavor
- lemon zest
- vanilla
- 2 cups walnuts
- 1/2 cup unsweetened cocoa powder
- 1/2 cup candied fruits
- 2/3 cup water
- 3/4 cup sugar
- rum flavor
Steps
The preparation of the vegan Romanian panettone is very simple, watch the video HERE.
Put the flour, sugar, salt, lemon zest, yeast, orange juice, water,
Add the lemon and vanilla flavor, then knead at low speed for about 10/20 min. When it detaches from the walls, transfer it to the work surface
form a ball. Put it in a bowl and let it rise until doubled.
cream preparation:
In a bowl, put the cocoa, chopped walnuts, sugar
mix. Add the rum flavor or other flavors as desired, add water and mix well.
Assembly:
Once the dough has risen, divide it into two parts. Roll out the first piece with a little flour or a little oil if needed.
Put half of the prepared cream on top. Add candied fruits as desired and roll up. Do the same with the other half of the dough.
Twist the two obtained rolls and place them in the mold. Cover and let rise to the edge then brush with plant-based milk or water.
Sprinkle some poppy seeds on top and bake at 340°F for about an hour.
