Whole wheat biscotti
I biscotti I really like biscotti and I think it’s clear from the various versions I’ve proposed to you, from the classic ones, with chocolate, with hazelnuts, vegan, etc. Today I chose to try making a version using whole wheat flour that lately I’m using a lot in my desserts! The biscotti or cantuccini are typical sweets prepared during the Christmas season and enjoyed at the end of the meal accompanied by Vin Santo. They can also be a gift idea for our friends or relatives if we make a themed package.

Ingredients for whole wheat biscotti:
- 2 1/2 oz butter
- 3/4 cup sugar
- 3 oz eggs
- 1/4 tsp baking powder
- 1 1/3 cups whole wheat flour
- 3 1/2 oz almonds (Or other nuts)
Steps
The preparation of whole wheat biscotti is very simple and quick, watch the video HERE.
For this recipe I used the stand mixer but electric beaters are also fine.
Put the butter, sugar, and start to work with the beaters for a few seconds (it does not need to be whipped). Add the eggs, baking powder without stopping the machine. Add the flour and knead for a few minutes.
Finally add the nuts and mix well. Put a bit of flour on the work surface and transfer the obtained dough. Divide it into three equal parts. Roll out one part at a time forming logs.
Place them on a baking sheet lined with parchment paper, leaving some space between them. Brush with beaten egg then bake at 375°F for about 15 min. Once cooked, let them cool down.
Then cut them and arrange them again on the baking sheet with the cut side up. Bake at 300°F for about 10 min with a spoon in the door.
