Zucchini carbonara!

A delicious main dish, very simple to prepare and slightly lighter than the classic carbonara since we replaced the guanciale with zucchini, but if you prefer, you can use both! Personally, I love this pasta!

Ingredients for zucchini carbonara:

  • 2 zucchini
  • salt
  • pepper
  • extra virgin olive oil
  • 1.75 oz pecorino
  • 2 eggs
  • 7 oz pasta

Steps

  • In a pan, put some oil, the sliced zucchini, and cook for about 10 minutes, stirring occasionally.

  • Add salt. Add the cooked pasta and a ladle of pasta cooking water. Meanwhile, in a bowl, put the eggs, a bit of salt and pepper.

  • Beat the eggs. Add the pecorino and mix. Put the obtained mixture on the pasta with the heat off and mix until you get a nice creamy texture.

  • Enjoy your meal!
