Zucchini Crepes with Salmon and Ricotta
A dish to “lick your lips” 😋 a perfect combination of zucchini, ricotta, and salmon! A simple recipe to prepare that we can make in advance and cook at the moment! I chose to make some crepes with zucchini in the batter and fill them with ricotta and smoked salmon, a real treat! Ingredients for Zucchini Crepes with Salmon and Ricotta:
- 1 egg
- 200 ml milk
- 3/4 cup flour
- 1 zucchini
- 2.7 tbsp extra virgin olive oil
- parsley
- salt
- 1 cup ricotta
- 5.3 oz smoked salmon
- 1.8 oz scamorza cheese
- salt

Crepes preparation:
Place the zucchini, milk, a pinch of salt, the oil, parsley, the egg,
Add the flour and blend. Form the crepes with the obtained mixture. Once cooked, let them cool (so we can prepare them well in advance), then take one crepe at a time and spread some ricotta on each one,
add a bit of salt, pieces of smoked salmon, and pieces of scamorza cheese. Close and place it in a baking dish.
Continue with the others in the same way. Sprinkle some parsley on top and a drizzle of oil and bake at 356°F for about 20 min.
