Zucchini Swirls with Salmon and Ricotta
A tasty recipe prepared in just a few minutes that we can serve as an appetizer in a lunch/dinner with a seafood menu. The swirls are very simple to make, and the great thing is there’s no need to grill them before filling. For the filling, I chose to pair ricotta and smoked salmon because I like it very much, but alternatively (since I already know you’ll ask), you can also use cream cheese like Philadelphia and replace the salmon with ham or speck, for example!

Ingredients for Zucchini Swirls with Salmon and Ricotta:
- zucchini
- smoked salmon
- ricotta
- breadcrumbs
- extra virgin olive oil
- salt
Steps
The preparation of zucchini swirls with salmon and ricotta is very simple, watch the video HERE.
First, wash and clean the zucchini, cutting off the ends, then slice them thinly (I used a mandoline grater). Pass each slice through the breadcrumbs, then take one slice at a time and sprinkle a little salt on top
Put a thin layer of ricotta. Add pieces of salmon and roll. Drizzle some olive oil at the bottom of the pan
Place the obtained swirls upright. Continue until the ingredients are used up. Finally, drizzle some olive oil on top and bake at 356°F (180°C) for about 15/20 min.
