Ingredients for Apple and Dried Fruits Muffins
- 1 apple
- 130 g ricotta
- 1 cup whole wheat flour
- 1/3 cup milk
- 3 tbsp extra virgin olive oil
- 1 egg
- 1/4 cup walnuts (shelled)
- 1/4 cup whole peeled hazelnuts
- 1/4 cup peeled almonds
- 1 tbsp acacia honey
- 1/2 tsp ground cinnamon
- 1/2 packet baking powder

Preparation of Muffins with Apples and Dried Fruits
To prepare the muffins with apples and dried fruits, first peel the apple and grate it with the appropriate grater. Chop the dried fruits with the help of the food processor.
In a bowl, mix all the dry ingredients: flour, chopped dried fruits, cinnamon, and baking powder.
In another bowl, using a whisk, mix the ricotta with the whole egg, milk, EVO oil, and honey.
Finally, combine the dry ingredients with the wet ones and also add the grated apple pulp.
Mix everything with the hand whisk until a homogeneous mixture is obtained.
Distribute the batter of muffins with apples and dried fruits into the muffin cups, leveling well.
Bake the muffins in static mode at 340°F for about 25 minutes (always do the toothpick test before removing from the oven).
When cooked, take the muffins with apples and dried fruits out of the oven and let them cool. They can be stored in an airtight container for a couple of days at most.
