Ingredients for Pistachio Crusted Salmon
- 4 fillets salmon
- 1.8 oz panko
- 1 bunch parsley
- 1 pinch dried onion
- 1 tbsp sesame seeds
- 2.8 oz pistachio pesto
- to taste salt
Preparation of Pistachio Crusted Salmon
Preparing the pistachio crusted salmon fillets is very simple. First, take 4 nice salmon fillets with their skin weighing about 7 oz each (if you can’t find fresh salmon you can safely use frozen). Check carefully for any bones and remove them with the help of tweezers.
To create the breading for the gratin, mix the panko with the finely chopped parsley, dried onion, sesame seeds, and a pinch of salt.
Place the salmon fillets in a baking dish lined with parchment paper, skin side down. Spread a bit of pistachio pesto over each fillet, saving some to serve the fish.
Cover each salmon fillet with the prepared breading, pressing gently with your hands to make it adhere well.
Bake the salmon in the oven at 320°F for 15 minutes, then another 5 minutes with the grill function at 390°F.
When the pistachio crusted salmon fillets are cooked, remove them from the oven and serve them hot accompanied by the remaining pistachio pesto.
