The savory onion Tarte Tatin is an appetizer inspired by the famous upside-down apple pie invented in late 1800s France by sisters Stephanie and Caroline Tatin.
Just like the famous pie, these savory Tarte Tatins are made with puff pastry, placed over onion slices and baked upside down, keeping them golden and crispy. Since I wanted to serve them as an appetizer, I thought of making individual portions to enrich with a cheese cream made with fresh toma and cream. Of course, if you prefer, you can also make the savory onion Tarte Tatin in a single pan and then serve it sliced like a savory pie.

Ingredients for the Savory Tarte Tatin
- 3/4 cup flour
- 2 tbsp butter
- 1 tbsp extra virgin olive oil
- 1 red onion
- 3.5 oz toma cheese (fresh)
- 3 tbsp fresh liquid cream
- 1 sprig savory
- to taste salt
- 1 drizzle extra virgin olive oil (to grease the pan)
Preparation of the Savory Tarte Tatin
To prepare the savory onion Tarte Tatin, first prepare the puff pastry.
In a bowl, place the flour, cold butter cut into pieces, the tablespoon of EVO oil, and a pinch of salt
Begin working with your fingers to achieve a crumbly mixture
Add a couple of tablespoons of water and continue to knead
Then transfer the mixture to a floured board and work it until you get a firm dough. Cover it with plastic wrap and let it rest
In the meantime, peel the onion and cut it into slices about 0.2 inches thick
Grease a baking pan, arrange the onion slices, and season them with a pinch of salt and some savory
Take the puff pastry again and roll it out with a rolling pin to a thickness of about 1/8 inch. Using a pastry cutter or a glass, cut out rounds slightly larger than the onion slices
Cover each onion slice with a dough round, pressing along the edge with your fingers
Bake the savory onion Tarte Tatins in the oven at 428°F for about 15 minutes.
In the meantime, in a small saucepan, melt the toma cheese cut into pieces with the cream over very low heat, stirring until you get a smooth cream.
Remove the Tarte Tatins from the oven and let them cool slightly, then serve them upside down, drizzling with the cheese cream and decorating with some fresh savory leaves.
