Apricots Stuffed with Mascarpone Ricotta and Chocolate Chips

When I want to serve a delicious dessert without spending too much time in the kitchen, I definitely bring Apricots Stuffed with Mascarpone and Ricotta to the table.

Apricots Stuffed with Mascarpone Ricotta and Chocolate Chips

Ingredients

  • 3 apricots
  • 2 tablespoons mascarpone (heaped)
  • 4 tablespoons ricotta
  • 3 tablespoons sugar
  • to taste chocolate chips
  • 1 teaspoon rum (optional)

Tools

  • 1 Small Bowl zenker

Preparation

  • Cut in half and remove the pit;

    In a small bowl, add mascarpone, ricotta, and sugar. (if desired, also the rum). Mix well;

    Add chocolate chips and mix;

    Stuff the apricots in the part where the pit was removed;

    Refrigerate for one hour, maximum two;

    Serve on a tray.

If there are leftovers, you can store them for one day in the fridge in a well-sealed container.
