Ingredients

  • 4 slices bread (rye)
  • 1 avocado (ripe)
  • to taste fine salt
  • to taste pepper
  • to taste extra virgin olive oil
  • 4 eggs
  • 2 tablespoons lemon juice

Preparation

  • Start cooking the eggs sunny-side up with a drizzle of oil in a non-stick pan or if you prefer, poach an egg;

    Cut the avocado in half and remove the pit;

    Slice the avocado thinly;

    Slice the bread;

    Distribute the avocado slices over the bread;

    Separately mix salt and oil and pour over the avocado-topped bread slice;

    Pour the lemon juice;

    Sprinkle with pepper or assorted seeds;

    Finally, place the cooked egg on the bread slice, add a pinch of salt, and enjoy!
