Ingredients

  • 4 fillets fresh salmon
  • 1 cup cherry tomatoes
  • 1 red onion
  • 2 oranges (untreated)
  • 2 lemons (untreated)
  • as needed fresh thyme
  • as needed black pepper
  • as needed salt
  • as needed extra virgin olive oil

Preparation

  • In a bowl, pour the citrus juice, a drizzle of extra virgin olive oil, salt, and pepper;

    Preheat the static oven to 356°F;

    Wash and cut the cherry tomatoes in half;

    Thinly slice the red onion;

    Place the salmon fillets in a baking pan lined with parchment paper;

    Add the tomatoes and onion around the salmon;

    Pour the previously seasoned citrus juice;

    Finish with orange, lemon slices, and some sprigs of thyme;

    Cover the pan with aluminum foil and bake in the preheated oven for 15 minutes;

    Remove the foil and bake for another 10 minutes until the salmon is slightly golden.

If you want to give your dish a Christmas touch, add some pomegranate.
