- 2.2 lbs beef rump or silverside (in one piece)
- 1.8 oz lard
- 2 cloves garlic
- 1.8 oz butter
- 1 cup dry white wine
- 1 onion (with clove)
- 1 leaf bay leaf
- 1 tbsp tomato sauce
- 1 cup hot water
- 2 stalks celery

Preparation
Salt and pepper;
Pour the wine and let it evaporate;
Add the studded onion, bay leaf, and sauce diluted in hot water;
Close the pot, at the beginning of the hiss lower the flame and calculate 45 minutes of cooking;
Open the pot, add the potatoes (if you want them as a side dish) and calculate another 15 minutes of cooking;
