Ingredients

  • 18 oz broccoli
  • 12 oz potatoes
  • 1 leek
  • 2 tbsp butter
  • 3 cups vegetable broth
  • 1 sprig rosemary (or thyme)
  • to taste salt
  • to taste pepper
  • to taste croutons
  • to taste olive oil

Tools

  • 1 Ladle lagostina
  • 1 Pan kamberg
  • 1 Immersion Blender braun

Preparation

  • Clean the leek and cut it into thin slices;

    In a hot pan, melt the butter and slowly cook the leeks for 10 minutes;

    Add the potatoes and stir;

    Next, add the broccoli, sauté for a few minutes, and add the previously salted vegetable broth;

    Let it cook gently for 30 minutes;

    When the vegetables are cooked, blend until creamy;

    Return the obtained soup to the heat and cook for a few minutes. Turn off the heat and add the pepper;

    Separately, toast some bread, add oil, some chopped rosemary or thyme;

    Serve the soup in plates with a bit of raw oil and the toasted bread.
