  • 21 oz pumpkin
  • 9 oz smoked scamorza cheese
  • 1.75 oz grated Parmesan cheese
  • to taste thyme
  • to taste extra virgin olive oil

Preparation

  • To prepare the cheesy baked pumpkin, first clean the pumpkin of seeds and peel it;

    Cut the pumpkin into very thin slices;

    In a 11-inch baking dish, pour some oil and arrange the first layer of pumpkin slices;

    Sprinkle with salt, pepper, and grated cheese;

    Arrange slices of scamorza cheese;

    Make 3 equal layers;

    Finish by adding some thyme and a drizzle of oil,

    In a preheated oven at 392°F for 40 minutes;

    Serve hot.

The leftover pumpkin can be stored in the fridge for a couple of days in a tightly closed container.
