Ingredients

for Chestnut Gnocchi Recipe

  • 10.5 oz potatoes (boiled)
  • 1.25 cups chestnut flour
  • 1 pinch fine salt
  • 1 egg

Preparation

  • To prepare the chestnut gnocchi, first boil the potatoes in a large pot;

    Cook until soft;

    Mash the hot potatoes in a bowl;

    Add the egg and a pinch of salt;

    Gradually add the chestnut flour and mix with a fork;

    Continue kneading with your hands until you get a smooth and compact dough;

    Take pieces of the dough and form logs about 0.75 inches;

    Cut the log to obtain gnocchi;

    Cook in boiling salted water for about 5 minutes or until the gnocchi float to the surface;

    Melt the butter with sage in a pan;

    Add the gnocchi to the butter with sage and toss;

    Serve hot with a sprinkle of cheese.

Store in the refrigerator for 2/3 days in an airtight container.

    Chestnut gnocchi can be frozen. Just place them on a tray and leave them in the freezer until they harden. Once frozen, store them in food bags and leave them in the freezer;

    If you don’t like the strong flavor of chestnut flour, you can mix it with another type of flour.
