Ingredients

  • 1.76 lbs chicken (old)
  • 6 cups water
  • 1 celery, carrot, yellow onion
  • to taste coarse salt

Preparation

  • Place the chicken cut into pieces by the butcher, water, vegetables, and bay leaf in the pot;
    Close the pressure cooker: from the whistle, lower the heat and cook for 30 – 45 minutes (depending on how old the chicken is);

    Turn off and wait a few minutes before opening the lid;

    I always salt at the end of cooking;
    When the broth is warm, remove the meat and place it in a clean pot;

    Strain the broth with a strainer and then pour it over the chicken;

The leftover broth, if stored in the fridge, should be consumed within 4 days, while if frozen within 3 months.
