It might sound cliché, I know, and perhaps it is. But it’s the quintessential Italian Saturday. So, I repeat, Foolproof Homemade Pizza Recipe.

Basic dough with very little yeast.
The yeast serves only to give a “boost” to the dough’s rise, so there’s no need to overdo it.
Flour, water, yeast, salt, and oil.

Ingredients
- 4 cups all-purpose flour
- 1/2 cup bread flour
- 1 1/3 cups warm water
- 1 tsp fine salt
- 1 tsp sugar
- 3 tbsps extra virgin olive oil
- 10 g fresh yeast

- 1 Rolling Pin excelsa real
Preparation
Dissolve the yeast in warm water and add the oil and a teaspoon of sugar; Gradually sprinkle the flour mixed with salt over with your hands. Knead. Work with your hands until you get a soft and homogeneous dough.
Cover with plastic wrap and let rise until doubled in volume (10/12 hours)
Separate into 2 dough balls and roll out the dough
Place them in 12.6-inch diameter pans previously oiled and let rest for another 1/2 hour
Season as desired; In a well-preheated oven at 428°F for 25 minutes.
First place in the lower part of the oven, halfway through cooking, move it to the upper part of the oven
5 minutes before taking it out, add the mozzarella previously drained to remove excess whey and cut into pieces.
