Crispy on the outside and creamy on the inside fried egg yolk recipe. A seemingly simple preparation, but capable of transforming a simple ingredient like an egg into a surprising dish.
This recipe is not new in my kitchen. I had already prepared it some time ago, when Chef Cracco brought it to the spotlight.
Recently, however, a chef seen on TV made me want to propose it again, reminding me how this recipe is still current and perfect to serve as a special appetizer, finger food, or second course to enrich a vegetable dish or a cream.
I have therefore decided to publish the fried yolks on the blog, explaining to you step by step how to prepare them at home.

Ingredients
- 8 eggs
- 8.8 oz breadcrumbs
- seed oil (plenty)
- 1 pinch salt
- 1 jar mayonnaise
Tools
- 1 Baking Dish ibili
- 1 Frying Pan metaltex
Preparation
Separate the yolks from the whites;
Carefully place the yolks on a bed of breadcrumbs;
Gently cover the yolks with more breadcrumbs and let them rest in the fridge for 12 hours;
After the time has passed, fry the yolks in plenty of hot oil for just 2 minutes;
Serve the fried yolks with mayonnaise (preferably homemade) or a sauce of your choice.
You can accompany these eggs with some good mashed potatoes
