I love friggitelli with cherry tomatoes. In summer, they are my favorite side dish.
I always cooked them in a pan with oil, but since I discovered that cooking them in the air fryer doesn’t change their flavor, I always prepare them this way. It’s really convenient, quick, and easy.

Ingredients
- 1.1 lbs friggitelli
- 2 cloves garlic
- to taste extra virgin olive oil
- to taste salt
- 9 oz cherry tomatoes
- 1 clove garlic
- to taste extra virgin olive oil
- to taste salt
Preparation
Line the air fryer basket with parchment paper;
In a bowl, place the friggitelli and enough oil to then distribute by hand over all the friggitelli;
Distribute the friggitelli in the basket along with the garlic in its skin;
Add fine salt;
Cook at 375°F for 15 minutes. Check the basket after 10 minutes;
For the seasoning, sauté garlic and oil in a pan;
Remove the garlic and add quartered cherry tomatoes. Salt;
Cook for 10 minutes on low heat and turn off.
Add the friggitelli to the cherry tomatoes and mix;
The friggitelli are ready.
Store in the fridge for up to 2 days.
