Ingredients
- 2.92 cups flour
- 1.06 tsp baking powder
- 3.5 cups apples
- 1.10 cups sugar
- 0.35 cups wildflower honey
- 1.32 cups butter
- 1 pinch salt
- 2.82 tsp spice mix (ginger, cinnamon, nutmeg, cloves)
- 2 eggs (large)
- 0.31 cups chopped walnuts
- 0.31 cups almond flour
- to taste powdered sugar

Preparation
In a bowl, place sugar, eggs, honey, and the melted butter. Mix with a hand whisk;
Add gradually, salt, spices, chopped walnuts, almond flour, all-purpose flour, and baking powder. Mix with a spatula to get a homogeneous batter;
Grate the peeled apples finely, squeeze out as much water as possible, and add them to the batter;
Grease a 9.5-inch spiral mold well and pour the mixture into it;
Bake in a convection oven at 320°F for about 45/50 minutes;
Once baked, let the Gingerbread cake cool slightly and gently invert it once cooled;
Decorate as desired with powdered sugar and currants for a touch of Christmas red color.
