Do not thaw them first. The secret is to cook them directly from frozen: this way they don’t release too much water and retain their flavor.

A very hot pan. Pour a drizzle of extra virgin olive oil or a knob of butter (my preference) and heat the pan well before adding the mushrooms.

High heat cooking. Cook the mushrooms on high flame for 5/10 minutes, stirring often. When the water has evaporated, lower the heat and season with salt, garlic, parsley, and a pinch of pepper.

No lid. Let the moisture evaporate, only this way the mushrooms will remain tender and not watery.

Preparation

  • Add the frozen mushrooms directly to the pan. Raise the heat and stir with a wooden spoon;

    Cook on high heat and let the water released by the mushrooms evaporate for at least 10-12 minutes;

    Do not cover;

    Deglaze with white wine;

    When the mushrooms are soft, add salt, pepper, and fresh chopped parsley;

    Stir and serve immediately.

If you prefer, you can use chili pepper to make it spicier.
