To prepare the hunter’s chicken, first wash the chicken pieces under running water and dry them with paper towels;
Sauté in a large pot the chopped ingredients;
Cook slowly and add garlic and rosemary;
Once the chopped ingredients have softened, add the chicken pieces skin-side down initially;
Turn to cook on all sides;
Add salt and chili pepper. Stir
Deglaze with red wine and let it evaporate
Add the purée
Pour some warm water, put on the lid, and cook slowly for 50 minutes.
Stir occasionally. Add more water if the sauce dries out too much. remove the garlic
